Minestrone Soup

Minestrone Soup

Warm and comforting, these can be frozen in freezer bags and saved for a future day. The frozen soups last a very long time!

Ingredients

  • 1 tbsp olive oil
  • 1 cup chopped carrots 
  • 1 yellow onion, diced
  • 1 cup chopped celery
  • 1 zucchini, chopped
  • 1 yellow squash, chopped 
  • 1 cup green beans, chopped into 1-2cm pieces
  • 4 cups chicken broth
  • 2 cups water
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp parsley 
  • 2 tsp dried basil 
  • ½ bulb garlic, minced 
  • 2 15oz cans of petite diced tomatoes
  • 4 tbsp tomato paste 
  • 1 15oz can of red kidney beans
  • 1 cup elbow pasta 
  • ½ tsp salt 
  • Ground black pepper 

Directions

  1. Add olive oil to pot on medium heat.
  2. Add in minced garlic and onion and cook until onion is softened (a few minutes).
  3. Add in carrot and celery and cook until both are sweating.
  4. Add in chicken broth and water.
  5. Add in oregano, thyme, parsley, and basil. 
  6. Add in diced tomatoes and tomato paste and green beans. 
  7. Wait until soup comes to a boil. Add in zucchini, yellow squash, and beans. 
  8. Wait until soup comes to a boil (about 5-10 minutes).
  9. Freeze.
