Cheddar Cheese Souffle for 2

Ingredients
- 1/2 cup of whole milk
- 1.5 Tbsp of butter
- 14g of all-purpose flour
- 2 eggs, yolks and white separate
- 1/4 tsp Salt
- Pepper
- 1/4 tsp cayenne powder
- 1/4 tsp cream of tartar
- 45g of grated cheddar (or other soft cheese)
- 1 Tbsp grated parmesan (optional)
Directions
- In a small saucepan, melt butter. Once butter is melted, add in flour and combine.
- Very slowly add in milk. Mixture will first appear thick but will thin out once all of the milk has been added.
- Bring to a simmer and then cook on low heat until sauce has thickened.
- Once sauce has thickened, add in salt and pepper. Move everything to a separate mixing bowl and whisk together with egg yolk until well combined.
- In a separate mixing bowl, combine egg whites with cream of tartar and beat (with a hand-mixer) until stiff peaks form.
- Fold in egg whites into the rest of the mixture. Add cheese and cayenne.
- Divide into two separate ramekins and bake at 400 degrees for 18 minutes.
